"Authentic" Italian Food

My wife and I are big Italian food fans. We have eaten at dozens of different Italian restaurant from Salt Lake City to San Diego, and something has come to our attention.

Every Italian restaurant that claims to be "authentic" usually isn't very good. The ingredients look and taste as if they were from a can. The food seems poorly prepared and the most obvious blunder of all, the food just don't taste very good. It's usually simple and bland. One of the biggest reasons I think we as Americans eat out, is to eat nice food that we can't prepare ourselves. I don't know why anyone would go to these "authentic" Italian restaurants, and pay for entrees they could easily make at home.
